mini life update - oct 21

• I haven’t worked out in an amount of time that is rapidly approaching “forever,” and I’m getting antsy so that must be fixed immediately.

• I’ve been making delicious vegan nachos and sometime this week I’m gonna get all autumn-y and cook a spaghetti squash. if you haven’t experienced the magic that is spaghetti squash please open your heart to its joys because it’s seriously amazing.

• equestrian team is going really well and I’m making a lot more friends this year. I know, of course, that horse riding isn’t vegan, and I feel conflicted about it, so I plan to make a post about that soon. in the meantime please don’t yell at me about being a bad vegan because…I know.

• you know how they say if you pick the right career you’ll look forward to waking up every day and be excited to go to work? I totally feel that with science illustration. it’s like…FUN to do my work. what a concept.

a fungus (?) we found on a stump at camp michigania. it was in among hundreds of beech trees that had been chopped, and when we poked it some powdery spores came out. haven’t been able to identify it yet, but it sure is pretty on that stump.

Raw Apple Pie Bites from The Healthy Maven:

  • 1 cup pitted dates
  • 1 cup dried apple rings, chopped
  • 1 cup rolled oats
  • 1 cup cashews
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp sea salt

Instructions:

  1. Add dates and apple rings to a food processor and process until pea-sized.
  2. Add in cashews and process until dates, apple rings and cashews come together in a sticky ball.
  3. Break up the ball with your hands and add in the oats, spices and salt.
  4. Continue processing until all ingredients are well combined and have a sticky consistency.
  5. Roll into 20 or so balls.
  6. Store in fridge or freezer.

so an overcomplicated conflict occurred and I won’t be racing on sunday… good news is I can instead go on the field trip w my science illustration class this weekend. I’m sad about the race, but there will be others…I intend to get my running back on track and find another half marathon to sign up for soon. but distance will soon be increasing again, dontcha worry.
